Tastey Tuesday...

Today I have been trying some new recipes.
Seeing that it's Harvest time out there...or The Autumn/Fall season I decided to try some new Pumpkin recipes.
One is a Hungry Girl recipe called "Yum Yum Brownie Muffins"
(I did them as actual brownies and not the muffins). This is by far the EASIEST recipe...
Ingredients: 1 box of devil's food cake mix (about 18 ounces) (I actually used a brownie mix)
One 15-ounce can pure pumpkin
Directions: Preheat oven to 400 degrees
Mix the 2 ingredients together. DON'T add anything else that may be mentioned on the box, like eggs, oil, or water. The mixture will be very thick, so you might be tempted to add in other things to make the batter smoother. Do NOT do this!
Place batter into a 12-cup muffin pan lined with baking cups or sprayed with nonstick spray. Place pan in the oven and bake for 20 minutes.
Makes 12 servings; serving size 1 muffin, 181 calories, 3.5g fat, 357mg sodium, 37g carbs, 2g fiber, 20g sugars, 2g protein. (Picture is below)
The other recipe I got off the internet...called Pumpkin Chocolate Brownies
Ingredients: 1/2 cup of pure pumpkin
1/3 cup brown sugar blend (such as splenda)
1 large egg
2 large egg whites
2 tablespoons vegetable oil
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking cocoa
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/3 cup of semi-sweet chocolate mini morsels (I cut up little Dark Dove candy)
Directions: Preheat oven to 350 degrees, Spray 8-or 9-inch-square baking pan with nonstick cooking spray
Combine the ingredients in the order until batter is smooth, spread evenly into prepared pan
Bake for 25-30 minutes or until wooden pick inserted near center comes out clean. Cool pan on wire rack Cut into 2-inch squares.
Makes 16 servings; serving size 1 brownie; 100 calories, 3.5g fat, 75mg sodium, 14g carbs, 1g fiber, 7g sugars, 2g protein (picture is below)

This is a picture that Rick sent me this morning...he was still able to celebrate his 30th b-day in Lake City. While I was at a garage sale this summer, I found a I'm 30 button...and there he is wearing it! We are almost half way through the time that Rick has been gone and we will meet again...YEAH!
