Pics & Recipe

So this past Friday we went to the Iowa Cubs game. The little "Z-Man" was not feeling well and you can tell by the pics. However he did SO well!!! We decided to stay a the entire time. He really does enjoy going to games. He usually plays with his chair...going up and going down for a while. Then he goes and peeks over the ledge wanting to play on the pitchers mound. Then he will flirt with any girl that is near him. Then he will climb up on either myself or Rick. It's lots of fun and he doesn't want to leave our seats! (Which is good because we like to watch the game!)
So here are some pics...The clouds and sky were even putting on display of how God is so Awesome. So I want to include that too.
So today I made some Black Bean Hummus...a lot of people just say it's like Black Bean Dip...well ok you can call it that too.
Here is the recipe for it. :) I am really the only one who LOVES it so I only did half of it. :) This dip doesn't have many of the same ingredients of hummus, but it is about the same consistency. you can spread this on bread or tortillas with veggies for a quick sandwich, you can dip veggies, pita chips or even tortilla chips for a great snack. YUMMY!!!

Ingredients

2 cans black beans (about 3 1/2 cups)
1 small onion, diced
1/2 green pepper, diced (I add whatever I have on hand!)
3 cloves garlic, minced
2 T ground cumin
1 1/2 t olive oil
2 T chopped fresh cilantro
1/4 c vegetable broth

Directions

Drain and rinse black beans if using canned.
Place olive oil in skillet set over medium-high heat. Add onions, peppers, and garlic and saute about three minutes, until vegetables are fragrant and starting to brown slightly. Add cumin, stir well, reduce heat to medium and cook another two minutes.
Place beans in food processor and pulse seveal times. Add vegetable mixture and pulse a few more times. Add vegetable broth in small batches to thin the dip to the desired consistency. Garlish with chopped cilantro. Serve immediately or store in refrigerator for up to 10 days.

Makes eight 1/2-cup servings!
